Grilled TERIYAKI SALMON WITH COLD RICE NOODLE

you will need:

Teriyaki Salmon Fillet 240g
Cooked Brown Rice Noodles 400g
Roasted Mixed Mushrooms 250g
Honey & Soy Vinaigrette 100ml

OPTIONAL:
Mixed salad vegetables
Boiled edamame
Sliced cucumbers

Spread teriyaki salmon fillet evenly on a tray.
Roast the salmon fillet in oven for 6 minutes at 180°C. (Cooking time may vary depending on the oven).
Boil water.
Blanch brown rice noodles for 1-2 minutes in the boiling water.
Drain water and rinse the noodles with tap water to cool before. Drain any excess water.
Sauté roasted mushrooms for 4 minutes on medium heat.
Plate noodles and add vinaigrette, sliced cucumber and boiled edamame. Mix together!
Check on the salmon fillet and remove from oven.
Place teriyaki salmon fillet and sautéed mushroom atop the brown rice noodles!
